- 9 1/4 Gal +2 cups Shredded Romaine lettuce
- 8 lbs. + 6 oz. Water chestnuts
- 2 Gal. + 5 1/2 c. Mandarian Oranges
- 1 Gal. +3/4 c. chopped bell pepper
- 12 lbs. + 8 oz. USDA diced chicken (100101)
- 3 1/8 c. each: vinegar and oil
- 1 cup + 1/2 Tbsp. soy sauce
- 1/2 c. + 1 tsp. honey
- 1/3 c. maple syrup
- 8 1/3 oz. toasted sesame seeds
- 16 oz. + 1 1/3 Tbsp. Sesame oil
- 100 - 1 oz. bags Sunchips® Mulitgrain Snacks - Original (11151)
Directions
- Prepare salad dressing with oil, vinegar, honey, sesame oil, soy sauce and maple syrup.
- Toss with Romaine lettuce, water chestnuts, green bell peppers and toasted sesame seeds
- Portion 1 1/2 c. romaine. Top with Mandarian oranges and chicken. Coarsely crush Sunchips® Multigrain Snacks and put on top of salad
