Ingredients

  • 9 1/4 Gal +2 cups Shredded Romaine lettuce
  • 8 lbs. + 6 oz. Water chestnuts
  • 2 Gal. + 5 1/2 c. Mandarian Oranges
  • 1 Gal. +3/4 c. chopped bell pepper
  • 12 lbs. + 8 oz. USDA diced chicken (100101)
  • 3 1/8 c. each:  vinegar and oil
  • 1 cup + 1/2 Tbsp. soy sauce
  • 1/2 c. + 1 tsp. honey
  • 1/3 c. maple syrup
  • 8 1/3 oz. toasted sesame seeds
  • 16 oz. + 1 1/3 Tbsp. Sesame oil
  • 100 -  1 oz. bags Sunchips® Mulitgrain Snacks - Original (11151)

Directions

  1. Prepare salad dressing with oil, vinegar, honey, sesame oil, soy sauce and maple syrup.
  2. Toss with Romaine lettuce, water chestnuts, green bell peppers and toasted sesame seeds
  3. Portion 1 1/2 c. romaine.  Top with Mandarian oranges and chicken. Coarsely crush Sunchips® Multigrain Snacks and put on top of salad
