- 4 #10 cans USDA Black Beans, drained (100359)
- 12.5 lbs. USDA Frozen Corn, thawed (100348)
- 1 gal. + 2.75 cups Fresh AP Green Bell Peppers chopped
- 1 gal. + 2.75 cups Fresh AP Red Bell Peppers chopped
- 1 lb. + 4 oz. Fresh AP Red Onions
- 100 (.875 oz.) bags Baked! TOSTITOS® SCOOPS!® Tortilla Chips (42537) or SUNCHIPS® Original Multigrain Snacks (11151)
- 2 cups Lemon Juice
- .5 cup dried Parsley
- .25 cup ground cumin
- 2 Tbsp + 2 tsp. Garlic powder
- 1 gal + 2.75 cups Salsa
- 1 cup USDA vegetable oil (100439)
Directions
- Chill canned beans prior to preparation.
- Combine drained beans, corn, diced peppers and onion. Set aside.
- Mix all dressing ingredients together.
- Pour over the bean salad and toss lightly to combine.
- Chill 2 hours before serving.
- Serve 1 1/4 c. Black Bean & Corn Salsa with 1 bag of Baked Scoops
