Ingredients

  • 4 #10 cans USDA Black Beans, drained (100359)
  • 12.5 lbs. USDA Frozen Corn, thawed (100348)
  • 1 gal. + 2.75 cups Fresh AP Green Bell Peppers chopped
  • 1 gal. + 2.75 cups Fresh AP Red Bell Peppers chopped
  • 1 lb. + 4 oz. Fresh AP Red Onions
  • 100 (.875 oz.) bags Baked! Tostitos® Scoops!® Tortilla Chips (42537) or SunChips® Original Multigrain Snacks (11151)
  • 2 cups Lemon Juice
  • .5 cup dried Parsley
  • .25 cup ground cumin
  • 2 Tbsp + 2 tsp. Garlic powder
  • 1 gal + 2.75 cups Salsa
  • 1 cup USDA vegetable oil (100439)

Directions

  1. Chill canned beans prior to preparation.
  2. Combine drained beans, corn, diced peppers and onion. Set aside.
  3. Mix all dressing ingredients together.
  4. Pour over the bean salad and toss lightly to combine.
  5. Chill 2 hours before serving.
  6. Serve 1 1/4 c. Black Bean & Corn Salsa with 1 bag of Baked! Tostitos® Scoops!® Tortilla Chips.
