Chicken Ranch Delight

Ingredients

  • 6 lbs. + 4 oz. USDA diced, cooked, frozen chicken (100101)
  • 8 lbs. + 7 oz. cream of chicken soup
  • 1 -#10 can + 23 oz. diced tomatoes with green chiles
  • 6 lbs. + 4 oz. USDA RF shredded cheddar cheese (100012)
  • 3 Qts. + ½ c. chopped onions
  • 1 ½ c. + 1 Tbsp. oil
  • 8 lbs. + 7 oz. unsalted chicken stock
  • 100/1 oz. bags Sunchips® Original Sunchips (11151)

Directions

  1. Cook chopped onion in oil.  Add soup, tomatoes and broth. Simmer 5 minutes.
  2. In large baking dish, spread a layer of chicken,  Sunchips® Original Multigrain Snacks, cheese and sauce from above. Repeat, ending with cheese as the final layer.  Cover and cook at 250 degrees for 20 minutes.  Lower temperature to 200 degrees F and continue cooking for another 40 min. Serve immediately.
