Chicken Ranch Delight
- 6 lbs. + 4 oz. USDA diced, cooked, frozen chicken (100101)
- 8 lbs. + 7 oz. cream of chicken soup
- 1 -#10 can + 23 oz. diced tomatoes with green chiles
- 6 lbs. + 4 oz. USDA RF shredded cheddar cheese (100012)
- 3 Qts. + ½ c. chopped onions
- 1 ½ c. + 1 Tbsp. oil
- 8 lbs. + 7 oz. unsalted chicken stock
- 100/1 oz. bags Sunchips® Original Sunchips (11151)
- Cook chopped onion in oil. Add soup, tomatoes and broth. Simmer 5 minutes.
- In large baking dish, spread a layer of chicken, Sunchips® Original Multigrain Snacks, cheese and sauce from above. Repeat, ending with cheese as the final layer. Cover and cook at 250 degrees for 20 minutes. Lower temperature to 200 degrees F and continue cooking for another 40 min. Serve immediately.
