Ingredients

WHAT YOU’LL NEED FOR 100 SERVINGS:
  • 10 lbs. + 15 oz. USDA Diced Cooked Chicken (100101) 
  • 2 7/8 c. unsalted Chicken Stock. 
  • 5.5  #10 cans USDA low sodium canned pinto beans (100365)
  • 1.8 pouches (200 oz.) USDA low sodium salsa (110186)  
  • 1 lb. + 9 oz.  shredded USDA reduced fat cheddar cheese (100012) 
  • 5 ½ c. low sodium Cream of Chicken Soup 
  • 4 1/8 c. Salsa Verde
  • 1.5 Gal. cooked USDA long grain brown rice (101031)
  • 3 Gal.  + 2 c. shredded Romaine lettuce 
  • 2 lbs. 12 ½ oz. reduced fat sour cream 
  • 100 (.875 oz.) Baked! Tostitos Scoops  (#42537)

Directions

Plate It!

Heat chicken, soup, stock, salsa verde, cooked rice and beans in a pot. Slightly crush ½ bag of Baked! Tostitos Scoops and spread in a casserole dish. Add chicken mixture and top with remaining crushed Baked! Tostitos Scoops.    Bake for 20 minutes at 350 degrees.Remove from oven and add the shredded cheese.  Bake an additional 5 minutes.  Remove from oven and serve with shredded romaine and salsa. Each serving is approximately 1 ¼ c.

Bag It!

Serve Tostitos Chick N' Lada in a .875 oz. bag Baked! Tostitos Scoops.  Tear open the bag or cut along one side of the bag.  Spoon chicken mixture into the bag and top with shredded cheese, shredded romaine and salsa.
