SABRA® Hummus, Bean & Rice Quesadilla

Ingredients

  • 100 8" Mission™ whole wheat flour tortilla
  • 2.55 tubs (5 lbs) Sabra® Roasted Red Pepper hummus (#3455)
  • 1 gal + 1.75 c. USDA Brown Rice, cooked (101031)
  • 2.7 (#10 cans) USDA pinto beans, drained (100365)
  • 12 lbs. + 8 oz. USDA cheddar cheese, shredded,  low sodium (100012)
  • 8 1/3 (1 oz.) packages Mexican rice seasoning
  • 4 c. + 2 Tbsp + 2 tsp. USDA salsa (110186)
  • 8 Tbsp + 1 tsp cilantro, chopped
  • 4 c. + 2.5 Tbsp sour cream

Directions

  1. Cook rice with seasoning Mexican Rice seasoning (2 Cups dry + 1 seasoning package)
  2. Combine hummus with pinto beans
  3. Layer 1⁄2 of the tortilla with hummus mixture, rice and cheese
  4. Fold and press or grill until hot
  5. Combine salsa, fresh cilantro and sour cream
  6. Cut quesadillas and serve with creamy salsa
