- 100 8" Mission™ whole wheat flour tortilla
- 2.55 tubs (5 lbs) Sabra® Roasted Red Pepper hummus (#3455)
- 1 gal + 1.75 c. USDA Brown Rice, cooked (101031)
- 2.7 (#10 cans) USDA pinto beans, drained (100365)
- 12 lbs. + 8 oz. USDA cheddar cheese, shredded, low sodium (100012)
- 8 1/3 (1 oz.) packages Mexican rice seasoning
- 4 c. + 2 Tbsp + 2 tsp. USDA salsa (110186)
- 8 Tbsp + 1 tsp cilantro, chopped
- 4 c. + 2.5 Tbsp sour cream
Directions
- Cook rice with seasoning Mexican Rice seasoning (2 Cups dry + 1 seasoning package)
- Combine hummus with pinto beans
- Layer 1⁄2 of the tortilla with hummus mixture, rice and cheese
- Fold and press or grill until hot
- Combine salsa, fresh cilantro and sour cream
- Cut quesadillas and serve with creamy salsa
