Ingredients

  • 5.5 lbs. USDA Brown Rice (101031)
  • 1 cu + 1/2 tsp. limes juice
  • 2 gal. + 2 qts. + 2 cups Chicken broth
  • 2 tsp. salt
  • 1 tsp. pepper
  • 9 lbs. + 6 oz. USDA Turkey roast, chopped (100125) 
  • 6 bunches Cilantro, chopped
  • 1 #10 can USDA Black beans, drained (100359)
  • 3 cups Olive oil
  • 2 #10 cans USDA Corn, drained  (100311) 
  • 9 lbs Grape tomatoes
  • 5 lbs chopped Red onions
  • 100 (.875 oz) bags Baked! TOSTITOS® SCOOPS!® Tortilla Chips (42537)

Directions

  1. Place rice in a pan. Take chicken broth and pour over rice, cover pans slightly.
  2. Bake at 350° F for 25 minutes. Remove from pan and let stand covered for 5 minutes.
  3. Combine turkey, black beans, corn, grape tomatoes, and chopped onions and add to rice pan.
  4. Add squeezed limes, salt, pepper, chopped cilantro, and olive oil. Mix well.
  5. Serve 1 1/4 c casserole with 1 bag (.875 oz.) of Baked! TOSTITOS® SCOOPS!® Tortilla Chips.

Optional - Serve with a small bowl of salsa
